Bay leaves come from the laurel plant, which is an evergreen plant that is characteristic to warmer climates. 

Dried bay leaves are suitable for stews and braising and once the cooking process is finished they need to be removed from the pot. 

As bay leaves dry their flavour intensifies in comparison to fresh ones.
