Nutmeg has long been used as a carminative (to lessen wind formation and prevent flatulence). It has been found to be an effective antidiarrheal agent. Add nutmeg at the end of the cooking process, since heat promotes the evaporation of its essential oils, diminishes its flavour.
Nutmeg, which most Americans associate with holiday eggnog, is also an essential ingredient of the classic white sauce bechamel and a mulling spice, and it can be used to enhance the flavour of baked or stewed fruit, curries, custards, milk- and onion- based sauces, pasta, punches, stewed and braised meats and cooked vegetables - especially spinach, but also potatoes, pumpkins, squash, sweet potatoes, carrots, broccoli, and cauliflower.
